Choc Chip Fluffy Pancakes

 
Serves 4

Ingredients
135g Plain flour
1 Tsp baking powder
2 Heaped tbsp caster sugar
130ml Milk
1 Large Egg
2 Tbsp melted butter (plus extra for cooking)
1 Handful choc chips
Pinch of salt
Plus any extra toppings e.g. lemon, honey, ice cream...

Method 
1. Sift the flour, baking powder, salt and caster sugar into a bowl, then add the choc chips.
2. Using a seperate bowl, lightly whisk together the milk and egg, then whisk in the melted butter (make sure it's not too hot!)
3. Pour the wet mixture into the dry mixture and beat until you have a smooth batter and leave to stand for a few minutes.
4. Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter.
5. Cook for 1 minute, then turn it over and cook until both sides are golden brown.
6. Repeat until all the batter is used up. 

Serve with whatever you want, I suggest a scoop of ice cream!
